- After being presented with an opportunity, formed own LLC and assumed all equipment, clients/accounts, and associated Good Will from Rolling Smoke Inc. and started DBA Rolling Smoke Grill, to continue business.
- Since then, ran all financials, bookings, day to day operations, vendor communications, repairs, cooking, and any other responsibilities that have come up
- The new company has been profitable within it's first quarter of business and have only continued to grow to date

- Served as Line and Prep cook for food truck, running private events daily. Offered manager position by end of May 2023, but ultimately turned it down for another opportunity

- Began as dish boy in Restaurant in February of 2020, tasked with cleaning all dishes and equipment used on daily basis and deep cleaning restaurant by myself every night.
- By beginning May of 2020, had been promoted to Prep Cook, where I began to learn recipes and complete dishes by myself in kitchen.
- By end of May 2020, was promoted again to Line Cook on Food truck, managed service window, taking in orders, cooking orders, and serving orders by myself.
- By beginning of June 2020, had been promoted again, and assumed role of Manager and I ran Food Truck and Prep kitchen by myself with anywhere from 1-5 employees working at once.
- Continued to manage business until original owners retired and shut down by October 2022
