Spent time on both sides of the ball from Corporate, franchise and private. Was hired to help open Old Chicago's franchises for WD Ventures. We opened the first one in Logan Utah in Oct 2019. Owners had bought the rights to all of Utah and planned on opening more locations over the next few years with plans to open a total of 10 units over the next 10 years.

During 2022, Craftworks LLC the parent company of Old Chicago when out of business before being bought out of bankruptcy court by Fortune.

Owners did not like the way new company was running the company and choose to depart ways with Old Chicago. During the change over I oversaw the transition from Old Chicago to Ruby's Pizzeria & Grill.

  • Developed new menu, recipes and processes for all back of house
  • Set up new vendors and sourcing of new product, POS systems, Restaurant360, Host platforms , uniforms, menus
  • Trained all staff and managers on new systems and new menu.
  • Run all parts of operation. I am HR, Payroll, IT, hiring, training, ordering, inventory, P&L , Menu development,
  • Complete understanding of Toast, Restaurant 360 , Sling , Loman Ai and Kickfin. I do all the programming on all platforms and built out all system we use.
  • I work for Two owners that are pretty hands off, both live out of state and have other business that they focus on.
  • I make all day to day decisions and work with them on marketing and long term planning for their company.
  • Have built sales growth over the past 2 years with 12-20% same store sales year over year.
  • 2025 grossed over 3.2 million dollars in sales.
