My journey in the Grocery store industry started with Randall's as a sacker in 1991. The next year I was 17 and moved to meat department as a clerk , I waited on customers , stocked shelves and cleaned the market. At 21 I switched to Albertson's . By 23 I was a meat department manager for them. In 2002 they announced the closing of the Houston division. It was then i decided to open my own business. I owned and operated Majkszak's Meat Market for 21 years. December 31, 2023 was my last day. In October 2024 I became a partner for HEB as a meat cutter. Currently it's where I'm employed and looking very much forward to contributing all my years of experience to them and growing my career.
As a certified Meat Cutter daily my main duties are as follows:
* Cutting precise cuts in a timely manner and to the specs of our VTA 's while maintaining efficiency of trim.
* Making sure at all times that all equipment used in production is clean and operating correctly before each use,
* Making sure that all primals that come out of cooler are scanned for traceability and rotated correctly by it's use by date and when brought into cutting room it stays with in the proper cold chain.
* Follow my FPP cutting list to ensure the shelves stay properly stocked without over cutting.
As a owner / operator i wore many hats. We were a full service retail meat and seafood market. On the daily I made sure I had the inventory needed to lead my team in production of a variety fresh meats and seafood. We also manufactured a wide variety of fresh and smoked meats on the daily. My business thrived for many years and was a huge contributor to the community. Unfortunately the pandemic put a huge strain on our economy and my business was one of many that could not overcome it.
