  • Assisted returning GM in implementing previous standards of a great restaurant that had lost its way.
  • Generally aided the GM in setting new standards of service to increase perceived value of the Sway experience. Helped hold FOH staff to a high standard of product knowledge, and steps of service.
  • Also took on the role of Bar Manager. Performed pricing audits to keep liquor/beer/wine/sake/cocktails under predetermined cost percentages. (16%/22%/27%/21% respectively).
  • Mentored a new bar lead and taught him to run his bar program. He now holds the team to standards of bartending, cleaning, r&d, and adding to quarterly drink menus and specials. Oversaw him creating systems to keep track of bar waste and prep scheduling.
  • Added sought after bottles and hidden gems to the liquor list, educating staff on all.

  • Implemented strict training and pre-shift meetings to maximize product knowledge for all FOH employees.
  • Reported on and kept track of P&L and a declining budget.
  • Helped develop new cocktails for quarterly menu changes, keeping a close eye on cost.
  • Performed quarterly reviews of all FOH employees.
  • Kept up an aging building and contacted our own facilities team as well as other professionals to keep everything working. First fixed what I could myself to reduce cost.
