  • I started as a temp through front range staffing then the company through CMR decided to hire me on as a full-time employee my duties were intensive because we were short staffed and we needed coverage on every outlet we had which we had multiple kitchens in the resort I worked in the main kitchen but I filled in as needed where I was needed
  • I also did do serving and dishwasher with them I also assisted and filled in as the pastry chef my sous chef Heather was the original pastry chef and she needed someone to assist her while she took on the role as sous chef and because a baking background through mom and pop shops in Kansas where I lived I was able to accommodate her needs
  • Along with being pastry apprentice I was also an apprentice for garmager I was taught by this amazingly brilliant Jamaican women named vanet who taught Mr sculpting and flower art made with vegetables and fruit along with salads and how yo prepare charcuterie boards and crudites
  • Also vanet taught me a hit and cold side of a elevation line which was the line In resort I had no idea that even existed when I first started working there
  • I also helped with breakfast A la carte when needed I was shown and taught breakfast by our lead breakfast cook his name chef blue he was at the resort for over 20 years
  • Then a year Later my executive sous chefs Danny and Nathan hired Nathaniel Levin as head banquet chef that is when I met him and we began talking he explained to me his qualifications and that is when I asked him to mentor me
