You washed all the dishes quickly to keep up with the rush. At Soto there was alot of fancy small plates for the sushi and more general plates for the entrees, the dishwasher would wash all of these and organize them and put them back where they belong. But you had to be very very fast because you worked by yourself even on the weekends.
