MARKUS CAVALLO

Lakewood,CO

Summary

As a facilitator to extraordinary experiences, I have grown fond of connecting the guest with the experience and sharing unique details to make my time with the guest one to remember. As a bartender, I find it necessary to educate myself with all that is involved in the experience (ie. the menu, wine list, cocktails, the history Leadville). To do this, I have learned to listen to those around me, take what they teach me, and evolve it into my own craft. Although not listed, I have worked in the food and beverage off and on for the last 20 years, mainly with a fine dining background. I understand what it takes to be a strong leader by setting the example, but I can also be empathetic to being supportive as well. As a team, in both the food and beverage industry and outdoor recreation, we create experiences that the guests can take home with them and share with their families’ as memories they treasure for a lifetime.

Work History

Taproom Manager

Ski Cooper
Leadville, CO
12.2023 - 12.2025
  • I took care of upwards of a hundred guests at a time as a solo act
  • I trained new staff with no prior service experience to handle the role solo
  • I took inventory, seeked out new suppliers, set up accounts with Ski Cooper Food and Beverage Director and kept track of sales
  • Handled money at the end of the day and turned it into the accountant

Bartender

Red Ledges
Park City, UT
07.2023 - 11.2023
  • As a team at Red Ledges, we created experiences for our members that they would cherish and share with the other members in order to make their time at Red Ledges comfortable, fun, and thought provoking.
  • Yes, as bartenders, Joey and I really had a knack of invoking critical thought in the lives of our members. This is why we would have members conversate at our bar for hours. Always fishing for a smile but never shy to encourage members to do their best and enjoy themselves.
  • We crafted cocktails that catered to our membership and tweaked ingredients to help make the cocktails special for everyone

Beverage Director

Deer Valley
Park City, UT
12.2020 - 03.2021
  • Working service bar for Deer Valley was different for me. I enjoyed the aspect of being able to focus on crafting drinks and perfecting each drink that went out on the floor. You could really get in the zone, put your head down, and produce.
  • At times, I was creating cocktails for over 100 guests at a time, during lunch hours. This truly tested my efficiency as bartender and I learned how I can plan ahead and prepare better for busy rushes.

Beverage Director

Promontory
Park City, UT
05.2017 - 03.2020
  • At Promontory we served some of the world's elitist clientele. Detailed service was what was expected. We crafted cocktails to match the fine tastes of our clientele.
  • Enhanced wine knowledge was required and expected for this role. I have advanced knowledge in old world wine. Italian reds to be specific
  • Working primarily with the events staff at Promontory, we worked together to bring incredible visions for our guests events to life. We successfully worked with the members of Promontory on many social events such as wedding, business meetings, fundraisers, etc. As a team, we helped each other so that every event that we worked together was a success.

Assistant Expedition Director

Sea Quest
Friday Harbor, WA
05.2015 - 10.2016
  • As assistant expedition director of Sea Quest, my main duty was to overlook expedition guide training. This meant that I was to take guides on overnight trips with me and ensure that they had the skills necessary to be able perform as a professional ocean kayak expedition guide. We also made sure that each guide was equipped with the necessary gear to be able to successfully complete an expedition safely and smoothly. Doing the majority of the overnight trips during my experience with Sea Quest, we always made sure the guests were safe and provided with the trip they expected.
  • In the setting of Sea Quest, I became the educator that I am fond to be. My approach to the educational experience with the company was unique, but progressive. Our clients thoroughly enjoyed their experiences with us as guides and I believe all became more savvy naturalists and ocean kayakers.
